Experimental Design
Two oat cultivars, a normal one and a gluten-free one, were hulled. Approximately 300 g of the starting material was milled into flour. Milled samples were sieved into four different size fractions by sieving in a Vibro sieve separator using four different screens. For the screening of material, only one screen was used in the sifter. Material passed through the screen of the largest openings. The through was collected and fed to the sifter after replacing it with the next biggest screen. Likewise, the material was sieved using each of the four screens. A bottom collector was also used if the material passed through the smallest screen. Then, choose the fourth fraction for air classification to separate them into four-course fractions with different classifier wheel speeds. Then compare the protein and β-glucan content of different fractions.

There are a total of five treatments in the sieving section. The control group is not sieved, while treated groups are sieved by 53, 75, 125 and 250 μm sieving sizes.

Data collection
A spectrophotometer was used to measure absorbance. The The β-glucan content is calculated according to the data.
The protein content was determined by Leco nitrogen analyzer.
All analyses were made in 4 times.
